After speaking to Didier and Hélène Defaix for just five minutes, you start to realise what makes their wines so special. Not only do they have holdings in some of Chablis’ best-situated vineyards; their attention to detail in vine growing and winemaking is astounding.
Their focus has been on taking care of the vineyard through improving soil structure, biological pest control and painstaking vegetation management, and their cellar work is similarly precise. All this enables the potential of each “terroir” to fully express itself through fine, powerful and distinguished wines, which have a succulence of texture married to serious intensity of flavour that makes them delicious young yet also capable of considerable cellaring.

Very pleasant with flavours of flowers, honeysuckle in particular, and mineral notes, it is also full in the mouth with good length.
There is a deft touch of wood surrounding the white orchard fruit and honeysuckle aromas that have glimpses of oyster shell poking through. The rich, forward and relatively generous flavours possess a seductive mouth feel and excellent complexity on the dry for the vintage finish. This should age well for the medium term.
Classic Chablis nose of lemon and lime with a hint of spice. Dry and steely with flavours of lemon and honey offset by a certain richness and complex finish.
