Limoux is one of the highest appellations in the Languedoc and the wines are correspondingly fresh and mineral. The sparkling wines are made according to the traditional method and are a rounder, riper version of Champagne. The Le Limoux white wine is a beautiful example of the way in which blending can produce more than the sum of the parts: in this case this means the appellation's three varieties, Chardonnay, Chenin Blanc and Mauzac, fermented and aged in oak barriques.

A blend of Mauzac, Chenin Blanc and Chardonnay. Complex and very winey on the nose, with notes of Calvados, apple pie, cloves and herbs, and with oak very much in the background. Apple and peach flavours on the palate. Really quite refined and complex - and very persistent. Lovely.

This Chardonnay with a splash of Chenin Blanc has a full nose of white fruit ( peach, pineapple). Clean and fresh.
