Our trainers are out helping customers improve their wine knowledge, confidence and sales all year round. Here are a few examples of where training has made a big difference.
Ping Pong is a small chain of 11 restaurants in and around Central London, specialising in Dim Sum. As a fast moving restaurant with a very specific food offering, the overall objective was for staff to have a basic understanding of the wines they serve and a confidence to recommend them with certain dishes. We also had to take in to consideration the challenge of training all 11 outlets in a short space of time.
Working closely with Ping Pong’s Training Manager, we created a ‘Train the Trainer’ session to which trainers from each 11 restaurants came to learn about the new wines and effective ways through which they could pass this information on to their colleagues and improve the engagement in the wines they sell. The course used elements of our Serving Wine with Confidence course such as ‘The Benefits of Training’, ‘How to taste’ and ‘Food and wine matching’, along with a particular focus on their wines.
The team appeared to really appreciate the exercises and tips which they could take back to their individual restaurants to help them run a session and get the rest of the team excited about the wines they are selling. It is always satisfying to watch the people we train have ‘light bulb’ moments when they discover really easy ways of describing wines - madly scribbling down our tips. They particularly enjoyed the Food and Wine matching section - proving that our simple, memorable categories are easily adapted to all sorts of cuisines.

St Mellion International Resort
This is AA four star golf and leisure resort on the Devon Cornwall Border. As well as various bars, they have the Bewdern Brasseries and the An Boesti restaurant (fine dining) within the hotel. We were approached by the new F&B Manager as he was keen to use our services to help with the service and wine knowledge amongst the Brasserie staff. The objective was to have a standard across the team where they can make short wine recommendations and have a uniform approach to service within the more casual Brassier environment. This training would ultimately help with the hotel’s career progression amongst their staff - meaning they [text missing]
We chose the Serving Wine with Confidence course as this would fulfil their objective of basic wine knowledge, service within a more casual environment and confidence boosting. We ran two sessions over two days in order to train all staff whilst keeping the Brasserie functioning - it also meant Beatriz could enjoy a night in the hotel with all its lovely amenities!
The hotel was very efficient and organised in setting up the training - clearly happy to commit to the time it would take. The sessions went well - splitting the team meant the groups were quite small, resulting in a more intimate session. Some did admit to being a little afraid of wine and were therefore really pleased to come away feeling that they could confidently have a conversation about wine with a guest. They also had clear favourites when it came to the wines - something which will no doubt help both with selling and their engagement with wine going forward.

The Engineer, London
The Engineer is a much loved, well established gastro pub in Primrose Hill, North London. Having recently changed management and in the midst of a refurbishment, the objective was to introduce the new wines to the team and provide a standard approach for both new and existing staff. They were keen to keep the session interactive as this training would provide an ideal opportunity for some good team bonding. Due to the refurbishment, the training was to take place in the Tasting Room at our offices at Park Royal. Conveniently they would then go on to a session at the Sipsmith Distillery in Hammersmith - we were glad the wine training was first!
As we had the time, we decided to run a Serving Wine with Confidence course in the morning and after a break for lunch, do some more tasting. Having learnt the skills and vocabulary for tasting wines, the afternoon session would be about describing the wines and some basic product information. Having a large wine list and with so many other things to remember, we chose wines which would give them a good variety to get them started. We would then be able to build on this and extend the knowledge going forward.
This was a really fun yet worthwhile session - the team were keen to learn from the start. There was a mixture of knowledge levels, but those with more than others were more than happy to go back to basics and everyone clearly leant something new which would help them in their day to day job. They really appreciated the opportunity to try wines in the afternoon which were a little more unusual and at different price points. It was a pleasure to train them.

The selling wine with confidence is a great idea and when it was delivered by Lily she made what it a hugely complex subject seem simple easy to understand allowing our guys to really feel confident in talking about and selling wine.
