Food Matching Note:
A big structured wine with ripe tannins and ripe fruit would match nicely to heavy meat dishes such as veal with wild mushrooms and red wine, prime rib with cabernet jus or roast leg of lamb with mustard and red wine sauce.
Tasting Note:
Classic hints of cassis and cedar on the nose. On the palate the tannins are ripe but firm providing a wonderful structure which supports blackcurrant fruit and balanced acidity. The depth and concentration of this wine mark it out as a real classic.
Vinification Note:
Produced around the town of Monteforte with a total vineyard area of 1,5 Hectares

Harvesting Methods:
Very close pruning, selection and late harvest in small cases.
Vinification:
Grapes are pressed at 28 degrees, maintaining contact with skins for 15 days, separation of dregs of pressed grapes, 'malolactic' fermentation and matured in barriques (small oak barrels)
Ageing: One year in new barriques (Troncais)
