Food Matching Note:
Sautéed duck breast with figs and spicy sauternes / white wine sauce, warm pasta salad with mushrooms and radicchio or braised pork loin cutlets with thyme-lemon sauce.
Tasting Note:
The intricate nose offers lime, pineapple, creamy vanilla and touches of hazelnut. There is a stylish balance between power and elegance on the palate with steely acidity pinioning the ripe pineapple and juicey peach flavours. There are gracefull touches of oak to be found here too, with dried nuts and honey adding complexity and lending their weight through the dry, crisp, flinty finish.
Vinification Note:
Grapes are sourced and hand harvested exclusively from the single vineyard 'Les Macherelles' which is rated as 1er Cru quality, within Chassagne Montrachet. After a gentle pneumatic pressing the fermentation begins in vat and is completed in a combination of old and new French oak for 9 months. Bottling is with a light filtration.
