Food Matching Note:
A superb partner for fine fish dishes - especialy salmon, monkfish or rainbow trout, will also pair well with roasted or grilled poultry.
Tasting Note:
Smoky, toasty and pineappley on the nose, shows a palate pleasing breadth of minerals, grapefruit and red apples, some toasty, nutty highlights and a soft, juicy finish.
Vinification Note:
The Manciat Poncets who own this domaine believe that great wines are made in the vineyards not in the winery and as a result they stick to the traditional winemaking methods that have been used in the area for generations. Large temperature controlled (a small sop to the new world) tanks are used for fermentation and large oak barrels are used to age the wines for between 7 - 9 months. Small new oak casks are used for ageing 15 - 20% of the wine.
