Pan-seared venison with rosemary and dried cherries or Provencal lamb with Mediterranean vegetables.
Tasting Note:
Aromas of morello cherry and raspberry with complex earthy elements, mouthfilling on the palate with a good concentration of red berry fruits, a lick of smooth woody vanilla and a lovely supple, textured middle supported by very fine tannins. Elegant and complex despite its concentration with a well balanced and defined finish.
Vinification Note:
This 17th century property was bought by Pascal Maillard's father in 1952. Vinification is strictly traditional and filtration is light, allowing the superb quality of the grapes to show through.
Situated on the slopes below Savigny-les-Beaune at an altitude of 230m a.s.l and a kilometre from the town of Beaune the vineyard of Chorey-les-Beaune can be found. Soils consist of calcareous brown earth, marlstone and sandy limestone. The biggest threat to a quality harvest are frost and autumnal rains, which both occur frequently.
