Food Matching Note:
Tenderloin steaks with cranberry-port sauce and gorgonzola cheese, ginger beef tataki with lemon-soy dipping sauce or grilled lamb chops with spicy mango sauce.
Tasting Note:
Ruby red colour with garnet reflections. Full bodied bouquet, with a delicate violet scent. Dry on the palate, yet velvety, harmonious and very persistent at the same time. Very well balanced, with distinct class and style.
Vinification Note:
Vineyard: Bricco San Giacomo, La Morra
Harvest Period: 1st to the 10th of October
Fermentation: approximately 10 days at 24°C
Ageing: 14 months in steel, 4 moths in Slavonian oak and 4 months in the bottle prior to release
