Food Matching Note:
As an inviting aperitif, it whets the appetite in its pairings with hors-d'oeuvres and fish dishes. It is perfect in summer, but there are no seasonal limitations to the serving of this delightful wine.
Tasting Note:
One of Italy's most fashionable whites, it is noted for acute dryness and fresh, flinty acidity. This is a bright straw-yellow wine with greenish highlights. It has a full, delicate, elegant bouquet which brings flowers and fresh fruit to mind - mostly lemons, lilies of the valley and green apples. Its palate is attractively young, dry, fresh and well-balanced.

Vinification Note:
The Fontanafredda Gavi is produced in the province of Alessandria, south east of Piedmont, where the soil consists mostly of lime and clay. The method of pruning in the vineyards is the Guyot system. The grapes, carefully selected are lightly crushed in square caged presses. Following the separation of the must from the skins, the wine is refrigerated and undergoes static racking, after which the fermentation takes place at a controlled temperature (20°C). The wine is refined in steel for 4-5 months, and is then bottled in the spring following the harvest.
