Food Matching Note:
Pork chops with curried apple-onion sauce, blackened fish fillets steaks with tomatoes with green sauce or rack of lamb with red-currant wine sauce.
Tasting Note:
Light purple in colour, with a elegant, fresh intense nose of soft red fruits. The palate is equally open and fleshy with lots of fruit and little tannin. Wonderfully soft and accessible, plenty of character backed by good balancing acidity.
Vinification Note:
Carbonique maceration is the key to Beaujolais wines' success. The wines are fermented, with only the skins, cracked, as opposed to crushed or pressed. Through this type of fermentation the Gamay grapes true, delicate flavours perform. Once the short fermentation is complete the wines are racked and filtered prior to a short rest in the bottle before being released.
