Tasting Note:
Pale gold in colour with flashes of diamond brilliance, it has a light, fresh, mineral and citrus bouquet. The palate is crisp and dry, with a hint of ripe pears and a complex array of red and green apples, the finish is mouthwateringly refreshing and lengthy.

Vinification Note:
The vines are planted at an altitude of 300m a.s.l with a westerly exposure. The average age of the vines are roughly 50 years old, which are planted at a density of 3800 per hectare, making use of the guyot training system. The vines are not irrigated and are manually harvested. The winery has a gentle pneumatic press and phenolics are further minimised by using whole bunch pressing. Fermentation is limited to 20/21C and lasts for 20 days, after which the wines are racked and then left for four months to age in stainless steel. Lightly fined with PVPP - suitable for vegans and vegetarians.
