Vibrant and aromatic with notes of citrus fruits, lychee, pineapple and peach complemented by hints of minerals, herbs and mint. Full and dry, smooth and supple with balancing acidity and a long, minty finish.

Colour:
Straw yellow with a light, greenish hue.
Nose:
Broad and lively aromatic bouquet combining citrus, lychee, pineapple, kumquat and peach with mineral and herbal notes, hints of flint, peppers and wild mint.
Palate:
Full, dry and balanced by the acidity typical of this vintage leaving a long finish. The wine is smooth and supple with a satisfying aftertaste of mint.

'Funky' Tasting Note:

Full, dry and minerally with bags of exotic fruit generously bestowed by the Sicilian sun.

Made from a blend of native Italian and French grapes including Grecanico and Chardonnay.

This Sicilian secret, made from a blend of Italian and French grapes, is vibrant and aromatic with citrus fruits, pineapple, peach, hints of minerals and mint.

Vinification Note:

The 5 varietals are harvested and vinified separately before the final blending. The grapes are crushed and destemmed before fermentation which takes place at 15 degrees C for 12 days in temperature controlled, 200hl stainless steel tanks.

Detailed Vinification Note:

The 5 varietals are harvested seperately during August and September according to their maturity and ripeness and vinified seperately before the final blending. The grapes are crushed and destemmed before the juice is clarified through cold settling overnight. The juice is then innoculated with selected pure yeast strains and fermentation takes place at 15 degrees C for 12 days in temperature controlled, 200hl stainless steel tanks. The wine is blended, then allowed a resting period in tank before bottling in the first half of the February following vintage.
