Food Matching Note:
Ideal with sea food first courses, with shell fish and with light soups based on vegetables or with fish soups. Sicilian suggestions include: couscous with vegetables, soup with tenerumi (fresh green leaves), pasta with broccoli, stuffed artichokes, fiore sicano cheese, baked ricotta, pasta with Pachino tomatoes, timbal of capellini pasta, vegetable soup with potatoes, pesce curcato (fresh fish from Sciacca cooked whole). Pairings suggested by restaurant ‘Don Camillo’ in Syracuse: cavati (home-made pasta) with pistachios from Bronte and strips of cuttlefish in black sauce.
Tasting Note:
Bright straw yellow with hints of green. Peachy nose, with hints of vanilla, jasmine and green tea. Measured oak use. Soft structure and balanced acidity.
Vinification Note:
From vineyards at 200/250 metres above sea level at Ulmo in South West Sicily. Soils vary from shallow to very deep, medium texture: good presence of stones, slightly calcareous with sections of deep vegetable matter. The yield is 9 tonnes; 2,2 kg per vine, 3.800 vines/hectare, achieved using a vertical bilateral Guyot trellis. Harvest dates: Chardonnay 10th to 20th August, Grecanico 25 to 30th September. The grapes are crushed and destemmed; the juice is clarified through settling cold overnight and then inoculated with a selected pure yeast. After fermentation 90% of the grapes are aged in stainless steel tanks and matured on lees for six months. The remaining 10% of Chardonnay ferments in oak barrels and is mixed with the rest in March.
