Food Matching Note:

Ideal as an aperitif or with fish. Try it with one of the following: poached salmon with lemon mayonnaise or warm asparagus and prosciutto salad, with strips of sea bass.

Tasting Note:

Bright pale gold in colour with flashes of lime green, this wine is fresh, crisp and aromatic on the nose, boasting delicious gooseberry, melon and pineapple aromas. It is medium bodied and juicy, packed with fresh ripe melon and guava fruits and hints of bell pepper with a crisp, refreshing finish which is bone dry.

Grape:

Made from Sauvignon Blanc, the grape also used to make the famous white wine of Sancerre.

Location:

From the Helshoogte Pass about 6 kilometers outside of Stellenbosch on the Western Cape of South Africa.

Flavour:

Medium bodied and packed with lime, gooseberry, melon, pineapple, guava, and bell pepper.

USP:

The fictitious land of 'Thelema' was described by the colourful 16th Century French writer Rabelais.

Combined:

A refreshing and zesty white packed full of ripe, juicy tropical fruit from the ever popular South African district of Stellenbosch.

Vinification Note:

Sourced from established vineyards planted in 1984, 1985 and 1993 on Hutton (decomposed granite) soils at a density of 3200 to 3700 vines per ha. Vineyard practices include vertical hedge trellising and pruning the spurs of the vine to 2 buds every 15 cms, irrigation is by supplementary drip. Harvesting took place by hand from 2nd to 17th February and yielded 8.3t/ha. The grapes were de-stalked, crushed and pressed before cold settling and racking from the gross lees. A cool fermentation followed at 14 degrees C and the wine was allowed a period of ageing in steel before bottling and release.
