Food Matching Note:
Pan-seared swordfish steaks with shallot, caper, and balsamic sauce, garlic rosemary-marinated lamb chops or pork tenderloin with balsamic-cranberry sauce.
Tasting Note:
Big, expressive nose of spicy black fruits with gobs of vanilla, the palate is full but soft, offering great depth and character with a medley of ripe forrest fruit flavours, well defining structure and a rich vein of spicy vanilla that highlights the soft finish beautifuly.
Vinification Note:
Voerzio cultivate approximately 10 hectares either owned by themselves or leased. Average annual production is 25,000 - 40,000 bottles. The vineyards are biologically controlled and no chemical fertilisers, insecticides or anti-mould treatments are employed.
Fermentation lasts for 10/12 days and maturation is for 18 months, 50% in barrique and 50% in Slovenian oak.
