Tasting Note:
This wine is an excellent example of Meursault, expressing power and concentration in an elegant, stylish package. Precise and clear on the nose, showing pineapple and grapefruit aromas. The palate is tight, well structured and just as clean as the nose. Plenty of buttery vanilla flavours, appley acidity and bags of tropical fruit. The finish is soft and creamy with a touch of limes.
Vinification Note:
The vineyards are hand tended by Francois and his team of 2 helpers throughout the year, and the grapes are hand harvested at optimum ripeness - sometimes with a few passes, or 'tries' to select only the ripe grapes and to leave those that require further ripening until the next pick. Alcoholic fermentation, malo-lactic and ageing all take place in barrel, underneath Francois house in his ancient, poorly lit cellar. Barrels are of French oak, and a large proportion are new, Francois tends each individual barrel throughout its ageing, with regular batonnage and tasting to ensure that the wine is only racked, blended and bottled when it is absolutely ready for release.
