Food Matching Note:
Poached halibut with black truffles and purple-potato and crab gratin, lobster rolls with rosemary-ginger vinaigrette or grilled lobster salad with avocado and papaya.
Tasting Note:
Full, generous nose of toasted almond and perfumed honey. Medium bodied and very complex in the mid palate with a silky, glycerol texture intertwined ripe fruit and oak and all wrapped up with a clean, mineral acidity.
Vinification Note:
Sourced exclusively from a tiny plot, less than half a hectare, from the famous 'Les Poruzots' in Meursault which is rated 1er Cru quality. The grapes are hand harvested and the juice is fermented at a cool temperature in stainless steel before ageing in french oak barrels, only a small proportion of which are new.
