Food Matching Note:
Chinese barbecued pork with garlic sauce, beef medallions in red wine sauce or provencal lamb with Mediterranean vegetables.
Tasting Note:
Intense ruby red with a complex, concentrated bouquet of deeply concentrated rich blackcurrant aromas. The intense aromas on the nose are reaffirmed on the palate, enhanced by sweet oak in tones and dry tannins.
Vinification Note:
50 quintals of grapes are hand harvested per ha of vines. Fermentation lasts for about 15-20 days at a maximum temperature of 32 degrees C, with regular punching down to gurantee good skin contact. Le Stanze ages for 18 months in barriques (225 litres capacity) made of new oak and then in bottle for 8 months before release.
