Food Matching Note:
Shrimp toast with pickled ginger, pasta with summer vegetables, citrus tarragon chicken or warm jasmine rice salad with shrimp and Thai herbs.
Tasting Note:
Pale straw yellow in colour with golden hues. The bouquet is round, soft, fresh, with hints of vanilla and ripe fruits. On the palate, the wine is velvety, soft, rich and harmonious, with a characteristic hint of citrus rind on the finish.
Vinification Note:
The legal term ‘Riserva’ can only apply to Verdicchio aged at least 24 months, of which 6 months in bottle. Grapes are handpicked, collected in small baskets, and softly pressed and cold settled. A proportion of the must is vinified on the skins for 2 days (until alcoholic fermentation is around 1/3 complete) to heighten the extraction of varietal characteristics. 10-15% of the wine undergoes malolactic fermentation after which the wine is kept in vats for 12 months with lees contact, and is then refined in the bottle for a year before release.
