Food Matching Note:
Sautéed duck breast with figs and spicy sauternes / white wine sauce, warm pasta salad with mushrooms and radicchio or braised pork loin cutlets with thyme-lemon sauce.
Tasting Note:
Upfront vanilla, creamy butter, macadamia and toasted hazelnuts are found on its sumptuous nose. The palate is well defined, with hints of minerals among its peaches, green apple, tropical fruit and fresh baked bread characters. Balancing acidity draws out the finish.
Vinification Note:
Chavalier Montrachet lies west of the famous Montrachet vineyard itself. So many factors give it the edge over many of its neighbours. A perfect exposure to the east, and deep limestone soils, although stonier than Montrachet.
