The grapes are hand harvested from Les Feusselottes (0.23ha, 40yrs old) and Les Chatelots (0.12ha, 60yrs old) vineyards which comprise of a thin layer of brown calcerous soil over an alluvium sub soil which is free draining. Because of their tiny production and the proximity of the soil types which produces similar styles they are blended together. The vines are Goblet and Guyot trained and viticultural practices are completely organic. After harvesting, the grapes undergo 4 - 5 days of cold maceration on the skins where fermentation begins naturaly due to the wild yeasts present in the air. After 15 days fermentation in vats, the grapes are gently pneumaticaly pressed and the wine finishes fermentation in 70% new French oak barrels where it also ages for 15 to 18 months. Bottling is without fining or filtering. 1700 bottles made every year.
