Vinification Note:
As far back as the end of the 1800s, an alcoholic infusion of herbs and spices - mainly quinta (Caljssaia cinchona bark) - would be added to Barolo wine to make Barolo Chinato, a liqueur with digestive properties which also used to offered with a dash of soda-water as a fine aperitif.
