The superb 2010 Sauvignon Blanc has a very Loire-like, flinty bouquet with impressive delineation; imbued with a tangible “coolness” you might say. The palate is very well defined with subtle apricot and white peach notes behind the ripe gooseberry fruit. With attractive harmony towards the finish, this represents a very fine Elgin Sauvignon. Drink now-2015.

Food Matching Note:

This is fantastic if drunk with fresh asparagus and seafood dishes but is also enjoyable by itself.

Tasting Note:

This wine has a wonderfully aromatic nose showing fine mineral notes, hints of herbs, leaves and a touch of gooseberry fruit. The palate is extremely well balanced with classic sauvignon characters of gooseberry and grapefruit and a long, fine, minerally finish. Very stylish and polished.

Vinification Note:

The grapes were de-stemmed and crushed, the free run and pressings kept separate, racked clean and lees filtered and kept separate. Fermented cool at 14°C for 12 to 14 days, the wine was then racked soon after fermentation and only the best components used for the final blend with one filtration before bottling.

Detailed Vinification Note:

The grapes were hand harvested in four batches from the 16th to the 19th March according to the different clones and row directions (N/S = Clones 242 & 159, E/W = Clones 7a & 215, 159 &11 and 159). The average sugars at harvest were 22.5 baling with a natural pH of 3.25 and 7.8g/ml total acid. After de-stemming and crushing a pneumatic press was used to remove the juice which was cold settled for 24 hours with no skin contact. 50% was fermented with VIN13 and the other 50% with VIN7 yeast culture between 12 and 14 degrees C which took around 20 days to ferment until dryness. After 1 month the wine was racked off the gross lees, but left in contact with the fine lees until fining with bentonite, cold stabilistaion and filtering took place in the 1st week of August prior to bottling. At no point during production was there any adjustment of acids or other additions.
