Food Matching Note:
Charolais beef, stir fried beef with black been, barbecued rack of pork ribs and many hearty vegetarian dishes will all benefit from pairing with this versatile red.
Tasting Note:
A great spicy nose with hints of black pepper and cloves. The palate has baked fruit flavours of cherry and plum with a broad middle and a satisfying finish.
Vinification Note:
The hand picked grapes are all destemmed, except for the Carignan which is fermented as whole bunches. Fermentation is in contact with the skins and is temperature controlled for 40 days. Maturation is in steel tanks before bottling.
