This wine suits with a large range of food like scallops, sea perch and its white wine sauce, foie gras, or even a roasted piece of veal and its juice.
Tasting Note:
Yellow gold colour, quite intense with a brilliant brightness. The nose expresses richness and spices, with a particular touch of citrus fruits. There is also a subtle note of almond. The palate is very textured and it is crisp yet full in the mouth. It develops some yellow fruits, vanilla and citrus aromas. It is a beautiful wine with a very elegant, long and toasty finish.
Vinification Note:
This wine has been aged in 100% French oak barriques, 50% of which are new, and left on the lees for 11 months. Once a week the lees were stirred in order to improve the roundness and complexity of the wine. The malo-lactic fermentation was completed in barrel and the wine was bottled without any fining or filtration.
Detailed Vinification Note:
Grésigny is a 6ha parcel and is one of the most famous Premier Cru of Rully. It is planted on a medium slope with a south-eastern exposure. The vines are about 60 years old and grow on a brown, chalky soil that is very pebbly and dry. These are perfect conditions for chardonnay to express fineness and delicacy. This wine has been aged in 100% French oak barriques, 50% of which are new, and left on the lees for 11 months.
