Food Matching Note:
This elegant wine is best suited to accompany medium to light flavoured foods. It's good acidity makes it a perfect foil for rich or slightly fatty meats, such as duck or lamb. It's fruit character will compliment strongly aromatic mushrooms, such as in a mushroom and truffle risotto. Excellent to accompany a tuna steak dish or a mixed cheese selection.
Tasting Note:
Juicy, freshly crushed raspberries are found amongst some leafy, herby aromas on the nose. Offers crisp cherry and plum flavours, a medium to light body with some gentle tannin and a dry, complete finish.
Vinification Note:
Fermented using the traditional Burgundian method, in open vats with twice daily treading down and an extended maceration for optimal extraction. It is aged 100% in French barriques (25% of which are new) and on its lees for 7 months. The malo-lactic fermentation was completed in barrel before bottling without any fining or filtration.
Detailed Vinification Note:
“Meix” is an old Burgundian word meaning ‘a manor in the middle of a vineyard’. The vineyard called Meix Guillaume is situated at the north end of the appellation where the Côte de Beaune begins. It is based on a medium slope with an eastern exposure where the soil is mainly clayey. This wine has been fermented using the traditional Burgundian method, in open vats with twice daily treading down and an extended maceration for optimal extraction. It is aged 100% in French barriques (25% of which are new) and on its lees for 7 months. The malo-lactic fermentation was comleted in barrel before bottling without any fining or filtration.
