Ageing Potential:
Drinks excellently on release but will age admirably over a number of years, developing more complex raisined and fig fruit flavours.
Food Matching Note:
Perfect to accompany fruit based desserts, such as pear with dark chocolate sauce, sponges or ice creams. To accompany traditional dishes such as pasticceria monacale, cassata al forno or gelatine di agrumi.
Tasting Note:
Engagingly fresh and succulent on the nose, exhibiting classic floral and grapey aromas. The palate is medium bodied, sweet and sensuous with fine flavours of ripe apricot, honey and melon with good balancing acidity and a crisp, mouthfilling finish.
Vinification Note:
Sourced exclusively from the single vineyard 'Buonivini' in Noto, South East Sicily. The vines are planted at a density of 4500 per hectare. Fermentation, settling and fining all take place in temperature controlled stainless steel at around 15 degrees C for 40 days. Only 4000 half bottles were made in this vintage and therefore availability is extremely limited.
