Food Matching Note:
An excellent aperitif or partner for canapés or entrees, such as smoked salmon, oysters or charcuterie. Will compliment most fish especially when cooked cleanly and simply, such as grilled monkfish or oven roasted rainbow trout, will also compliment soft white cheese.
Tasting Note:
Bright white gold in colour, with a citrus and mineraly expressive nose. This wine is dry, super crisp, light and racy, with mineral acidity, green apple and lemon rind flavours with a refreshing, dry finish.
Vinification Note:
Sourced exclusively from the Petit Chablis classified vineyards around the village of Chablis. The grapes are harvested and transported as quickly as possible to the winery, where they are gently pressed and fermented in temperature controlled stainless steel tanks. When fermentation is completed to dryness, the wine is racked from its lees and allowed to settle for a few months in tank before a light filtration and bottling young for an early consumption.
