Food Matching Note:
Fried asparagus and mixed green salad, coconut-crusted fried shrimp, poached salmon with tarragon sauce and fingerling potatoes.
Tasting Note:
An elegant yet full bodied style with citrus and honey aromas, which are echoed on the palate and complemented by a touch of toasty oak, underpinned by fresh acidity.
Vinification Note:
The cellar is clean and very modern, with temperature control, a pneumatic press and stainless steel tanks. Harvesting is performed by hand and the grapes are crushed and pressed immediately upon reception. Fermentation begins after racking off the gross lees and ageing is in older French oak barriques in contact with the fine lees which are stirred occasionaly in order to incerease complexity. Bottled with a light filtration.
