Sublime with one of the following: roast turkey with hazelnut stuffing and a white wine gravy, citrus tarragon braised chicken or fried fish with Moroccan-style herb and Chardonnay sauce.
Tasting Note:
Straw colour, with medium-strong nose of butter, minerals and toasty vanilla-wood aromas.Mouthfilling and complex, refreshing acidity. Full bodied, lovely use of oak and crisp acidity, this is a particularly well balanced wine. Good length, pleasant finish.
Vinification Note:
Jean-Louis Chavy is producing top class wines. The Domaine is into fruit driven finesse but he also employs a subtle touch of toasty oak. The cellar is clean and very modern, with temperature control, a pneumatic press and stainless steel tanks.
