Food Matching Note:

An excellent partner for red meat, pasta, roasted vegetables or white meat with a rich sauce. Perfect with sticky barbecue ribs or pan fried venison steaks.

Tasting Note:

Deliciously ripe fruit dominates the nose, supported with spicy vanilla notes. The palate is full and concentrated but rounded and easily approachable, offering dense blackcurrant fruit, smoky oak flavours and fine grained tannin on the finish.

Vinification Note:

Ninquén (nin-ken) means “plateau on a mountain”, the name given to this first and unique Mountain Estate in Chile. Antu means "Son of" and is the name given to this exciting mono-varietal range of new wines which offer the pure expression of the grape coupled with the terroir of the Ninquén estate. The fruit is carefully selected and handpicked exclusively from the Ninquén Mountain, located in the heart of the Colchagua Valley before an extended maceration period during fermentation and aging in barrique.

Recipe Idea:

Creamy mustard & tarragon chicken 25 minutes - Serve 4 -

Ingredients
1 tbsp sunflower oil
4 boneless, skinless chicken breasts
200ml tub half-fat crème fraîche
½ tbsp each Dijon and wholegrain mustard
¼ tbsp dried or 2 sprigs of fresh tarragon

Method
1.Heat oven to 200C/fan 180C/gas 6. Heat the oil in an ovenproof pan. Season the chicken breasts, then brown for 1 min on each side. Remove from the pan, then set aside.
2.Add the crème fraîche, mustards and tarragon to the pan, stirring to combine everything. Bring to a simmer, then return the chicken to the pan, spooning some of the sauce over the fillets. Lift into the oven, then bake for 20 mins until the chicken is cooked through and sauce bubbling. Great with green beans and rice.

Tip
If you want to use chicken thighs instead of breasts, cover the pan, bake for 20 mins, then uncover the pan and bake for 20 mins more.
