Ageing Potential:
Bottled for drinking on release, but will increase in complexity if cellared for 2 or 3 years.
Food Matching Note:
The perfect aperitif but can also be paired with fine canapes or fish dishes.
Tasting Note:
Bright white gold in colour with a fine and consistent perlage and a clean, subtle nose. The palate is packed with rich yellow peach and apricot flavours with subtle hints of toasted nuts, yeast and hints of vanilla. Finishes elegant, lengthy and dry.
'Funky' Tasting Note:
Yellow peach, apricot and toasted nut flavours abound on this Pinot Noir dominated, fresh and clean Champagne.
Vinification Note:
The grapes are sourced from up to 77 different crus. The final blend uses 20-28% reserves, sourced from up to 25 different wines from 5 vintages. After 10g/l dosage the wine spends 3 years on its lees in bottle before degorgement.
