Food Matching Note:
This full flavoured rose has plenty of character when drunk by itself and can be paired with quite full flavoured or spicy dishes. Excellent with Thai style flaked salmon with garlic and ginger or pan fried veal milanese.
Tasting Note:
Pale and brilliant in colour La Rosée du Château exudes white flower perfume and sweet smelling nuances of red fruits. Graceful, fine and fresh.
Vinification Note:
Harvesting of the grapes is exclusively by hand. As the winery is situated at the centre of the domain the grapes are brought to the winery within minutes, an absolute necessity for keeping the fragrant varietal characteristics in the heat of Lebanon. The grapes are crushed into steel where fermentation is begun with a selected yeast and in contact with the skins. When the right amount of colour and fruit flavours have been extracted the juice is drawn off the skins and fermented in steel at controlled, low temperatures. There is no extended ageing on the lees, and bottling is exclusively at the château.
