Tasting Note:
Considered “the Queen of Grappa” all over the world, for the temper, the harmony and the emotion it gives at every sip. Limpid and crystalline, it recalls to the nose the smell of
fresh honeycomb, it displays the scent of acacia flowers, ripe quince, fresh muscatel and newly picked figs. In one’s mouth it clearly confirms the nose with the addition of a taste of bread crust.
Vinification Note:
Selected pomace collected fresh and soft from Picolit Cru Grapes from Colli Orientali of Friuli. Picolit is a very rare spargola grape which suffers from coulure (poor flower setting).
Fermentation:
In stainless steel tanks under vacuum and in a controlled temperature enviroment, followed immediately by distillation in order to avoid harmful secondary fermentations.
Artisanal Distillation:
Batch method with the removal of the heads and the tails in special artisanal batch steam stills renovated by Benito Nonino. The distillation happens very slowly to allow the volatile components, responsible for the perfumes, a proper evaporation period and subsequent condensation, in order to keep intact the precious organoleptic characteristics of the chosen vine varieties.
