Food Matching Note:
A very refreshing glass by itself, or pair it with fresh crustaceans or white fish. Copes beautifully with spicy Eastern dishes.
Tasting Note:
Pale gold in colour with youthful flashes of lime green, the nose is aromatic with pungent 'green' aromas of bell pepper and fresh crushed herbs. On the palate the wine is medium bodied and dry with a mouthwatering streak of minerals, hints of sub-tropical fruit and a layer of grassy gooseberry flavours that merge sublimely with the limey, crisp finish. Elegant and lengthy.
Vinification Note:
This is the first vintage harvested from Thelema's new vineyards in Elgin, which over the past few years has demonstrated it's ideal climatic conditions for producing premium quality Sauvignon Blanc. The vines were planted in 2002 on Hutton (decomposed granite) soils at a density of 3200 vines per ha. Vineyard practices include vertical hedge trellising and pruning the spurs of the vine to 2 buds every 15 cms, irrigation is by supplementary drip. Harvesting took place by hand from 11th to 17th February and yielded 5t/ha. The grapes were de-stalked, crushed and pressed before cold settling and racking from the gross lees. A cool fermentation followed at 14 degrees C and the wine was allowed a period of ageing in steel before bottling and release.
