Food Matching Note:
A very versatile wine that is equally at home by the glass as it is accompanying fish, salads or pasta. Great with simple, grilled white fish, smoked salmon or shellfish and will partner spicy Eastern dishes with ease.
Tasting Note:
Bright, white gold in the glass with a youthful, greenish tinge. Forward and fruity on the nose with a citrus and tropical fruit character. The palate is light, dry and crisp, with plenty of pineapple and ripe green apple flavours, a fresh mineral streak and a refreshing finish.
Vinification Note:
The vineyards are situated at an altitude of 200 -400 meters a.s.l. along the southern coast of Western Sicily and planted with 4500 vines/ha. producing a maximum yield of 80 quintals/ha which is all harvested manually.
The grapes are picked at optimum ripeness using Cantine Settesoli's modern approach of computer mapping and then transported as quickly as possible to the winery where they are destemmed before being chilled down to 8°C. The chilled grapes are then pressed and cold settled with enzymes. The must is then inoculated with selected yeasts and fermentation takes place in temperature controlled stainless steel tanks between 15 - 17°C. The resulting wine is then matured in stainless steel until ready for bottling at the winery.
