Food Matching Note:
A rich, refreshing and interesting glass of wine, which can be enjoyed by itself or paired happily with salads, fish or poultry. A delicious complement to melon and Parma ham with a balsamic dressing.
Tasting Note:
Pale straw yellow in colour with marine green highlights. The nose is intense and aromatic, packed with spring blossom and tropical fruits. The palate is quite full-bodied, dry, succulently textured and dripping with tropical flavours of melon, quince and passion fruit. Finishes fine, dry and crisp with an invigorating mineral streak.
Vinification Note:
100% Falanghina sourced from the areas of Ponte, Apice, Torrecuso, Bonea and Montesarchio which have mixed, prevalently clayey soils with a light striation of lime and sand. The whole bunches are hand picked from late September to early October, de-stalked and crushed into stainless steel tanks for cold settling. After racking from the gross lees the must is fermented at a cool, controlled temperature without any malo-lactic fermentation. The wine is then aged for a few months in steel before bottling.
