Food Matching Note:
A serious wine for fine food pairing. Excellent with swordfish, squid or lobster, Pietracalda has enough character to complement poultry, veal or pork and is an excellent choice to accompany spicy Eastern dishes. First choice for Risotta alla Pescatore.
Tasting Note:
Bright straw yellow in colour with flashes of emerald green, the nose shows profound aromas of spring blossom and wild fennel. The palate is packed with fresh picked white fruit such as peaches, pears and apples, with hints of apricots and minerals. It is dry and intense, with considerable flavour, a voluptuously textured body and fine balancing acidity. The finishes is elegant and lengthy with lingering flavours of white fruits and minerals.
Vinification Note:
100% Fiano di Avellino sourced exclusively from the single vineyard ‘Pietracalda’. Situated within Sorbo Serpico, the Pietracalda vineyard is 500m a.s.l. with a south-westerly exposure and has pyroclastic, clayey soil over a bed of volcanic ash and sand. The whole bunches are hand harvested during the middle ten days of October, destalked and crushed. Partly fermented in 50hl oak casks, the remainder is fermented in stainless steel tanks at a controlled, cool temperature.
