Food Matching Note:
A great partner to any Mediterranean or exotic fish dish. Perfect with linguine alla vongole, paella or swordfish sashimi with a mooli coulis.
Tasting Note:
Vibrant, golden straw yellow in colour with flashes of lime green; in the glass it appears viscous and oily in texture. Has intense, lingering aromas of peaches, pears, hawthorn and vanilla with hints of green leaf and mint. It is rich and elegant in the mouth, with a mouth-filling texture balanced perfectly with mineral elements and a clean, crisp streak of acidity. Finishes elegant, lengthy and dry.
Vinification Note:
100% Greco sourced from the Cutizzi area of Santa Paolina which has tufaceous, rocky deposits with white clay, and alluvial beds with light volcanic deposits. The whole bunches are hand picked during the middle ten days of October, destalked and crushed. Partly fermented in 50hl oak casks, the remainder is fermented in stainless steel tanks at a controlled, cool temperature.
