Food Matching Note:
An unusual but striking partner to Mediterranean influenced fish dishes with fresh green salads, pasta or white meats. Excellent with whole tuna fish roasted with tomatoes, asparagus and green beans.
Tasting Note:
Brilliant, translucent ruby in colour with a full and aromatic nose of freshly crushed strawberry and morello cherry. Medium bodied and fruit driven, the palate combines flavours of strawberry preserve and hints of green herbs to create a deliciously refreshing and food friendly rosé that has a lingering, crisp finish.
Vinification Note:
Made predominantly from Aglianico, hand harvested during the middle ten days of October from vineyards with clay and sandy soils with calcareous deposits within the Benevento district. After de-stemming and crushing, the juice enjoys a 12-hour period of maceration before racking off the skins and fermentation as a white wine in stainless steel vats at a controlled, cool temperature. Ageing is in steel for a few months before bottling and release.
