Food Matching Note:
Complements spicy meats and creamy or cheese sauces with pasta. Superb with a baked muscovada, mustard and balsamic basted ham with cloves.
Tasting Note:
Dark ruby red in colour with aromas of freshly crushed red fruit and dark spices such as cloves. Medium bodied and rich with black fruit flavours, spices and hints of oak. Finishes with a confident, fruit laced flourish.
Vinification Note:
Made predominantly from Piedirosso and Aglianico, hand harvested during the last ten days of October from vines grown in volcanic soil around Mount Vesuvius. The whole bunches are de-stalked and crushed into stainless steel tanks where fermentation is controlled at 26°C with 10 days skin maceration. Ageing is for 6 months in French barriques.
