Food Matching Note:
A great partner to most roasted meats (particulalry goose, turkey or ham) and perfect with pasta, grilled or barbecued red meat and cheese.
Tasting Note:
Intense ruby red in colour with wild black fruit, liquorice and wild berry aromas. The palate is medium bodied and fruit driven with a fine balancing structure consisting of well integrated, rounded tannin and spicy, smoky oak nuances. Finishes firm but soft.
Vinification Note:
100% Aglianico sourced from the Taurasi area which has deep deposits of volcanic ash soil rich in humus and clayey, sandy and alluvial deposits. Hand harvested during the last 10 days of October, the whole bunches are de-stalked and crushed into stainless steel tanks for fermentation at a controlled temperature of 26° and 2 weeks maceration. Transferred to new barriques with a medium toast where malo-lactic fermentation is completed and the wine is aged for 8 months before bottling. A period of bottle ageing follows until the wine is released ready to drink.
