Tasting Note:
Opaque, almost black in colour with brooding purple depths. Concentrated, rich aromas of black fruit jams, sweet spices, eucalyptus, vanilla and coffee. The palate is full and concentrated with immense fruit concentration, a well structured tannic backbone and integrated woody elements. Ends with a long, elegant and fruit driven, lingering finish.
Vinification Note:
Made from 100% Merlot sourced from the Toppole area of San Potito which has a very stony, poor soil with a clayey-calcareous substratum of rock. Hand harvested during the middle of September, the whole bunches were de-stalked and crushed into stainless steel tanks for fermentation at a controlled temperature of 26° with two weeks maceration on the skins. After malo-lactic fermentation it is then aged in new French barriques with a medium toast for 16 months.
