Tasting Note:
This wine displays classic aromas of toast and grilled nuts on the nose. On the palate the wine is minerally, with lovely buttery overtones. Classic white Burgundy.
Vinification Note:
Classic vinification with the grapes being destemmed and pressed using a pneumatic press. The primary fermentation takes place in classic French oak “barriques”. The wine is stirred regularly (“batonnage”) to ensure the maximum flavour and richness. Malolactic fermentation takes place in barrel, and the wine is bottled 18 months after the harvest. One third of the barrels are new. The rest are 1 to 3 years old.
