Vinification Note:
Given the limited source of fruit selected by the Noninos, production varies each year in accordance with the harvest. Fermenation takes place in stainless steel tanks under temperature-controlled conditions, followed immediately by distillation in order to avoid harmful secondary fermentation. Distillation is in artisanal batch steam stills and happens very slowly to allow maximum extraction of the desirable flavour carrying volatile components. The process is finished with six months to a year in stainless steel tanks to ensure the purity of the fruit.
