Food Matching Note:
Ideal served as a digestif at the end of a meal. More adventurous gastronauts will also find that it pairs very well with individual and powerful cheeses, with foie gras, with dry desserts and with all desserts based on honey or ice cream. It can also be added as an aromatic ingredient to sauces for game, white meats and fish.
Tasting Note:
Best served chilled to 10C in an iced glass with an open tulip shape. A few minutes' oxygenation by resting in the glass will open up the aromas and increase the nose/palate harmony. The spirit is intensely individual with a scent of spices and the character of the underlying chestnut blossom honey, but with increased elegance.
Vinification Note:
Gioello is a honey distillate - as distinct from mead or honey grappa (grappa with added honey). Production is necessarily very limited by the availability of quality honey which must come from ecologically pure environments. After many years of experimentation, the Nonino family has perfected the fermentation technique which varies depending on the individual honey used. It takes place in stainless steel tanks under vacuum and in temperature-controlled conditions. The distillation process is artisanal with specially designed batch steam stills. Distillation is very slow to ensure maximum extraction of the volatile aroma components. Finishing is through maturation of between six months and a year in stainless steel tanks to maximise purity of flavour.
