Tasting Note:
Intense with extraordinary length and aromas of lime, spice and complex mineral characters. The palate has vibrant citrus notes with tight, clean acidity and a long textured finish that will see the wine age gracefully for many, many years.
'Funky' Tasting Note:
"Wild yeast fermentation makes for a distinctly different, super-complex Aussie Riesling: sweet talc nose with hints of grapefruit; palate shows citrus and grapefruit pith chiselled with minerals; long, layered, slatey finish". Sarah Ahmed, The Wine Detective
Vinification Note:

Detailed Vinification Note:
Selectively hand picked into crates. Fruit Chilled in cool room to 0 deg C. Hand Sorted on sorting table to ensure only the best quality fruit Whole Bunch Pressed before settling, racking and inoculation. Slow, cool fermentation with Wild yeast to enhance complexity.
