Vinification Note:

The Vineyard is located in the Alto Valle Calchaquí, Colome vineyards at 2200 to 2500 meters above sea level. Vineyard yield is 3 tons per hectare in 10% of the vineyard, the remaining 90%, 7 tons per hectare. Drip irrigation is used and the Vineyard conduction system is espalier. The grapes were hand harvested. The Wine making process involves a slow fermentation, produced by selected yeasts. Maceration was prolonged (25 to 30 days). 50% of the juice went through malolactic fermentation in French oak barrels. Only the 75% of the wine was aged in French oak barrels (30% first usage barrels, 70% second usage barrels) for 15 months. It was clarified with egg whites from our biodymamic farm. Limited production of 900 bottles.
