The excellent 2007 Shiraz was matured in 500-liter barrels with 30% new oak. It has a clean, well defined, pure nose of dark plum, blackberry and damson fruit with just a faint hint of white pepper, although it is still youthful for its age. The palate is medium-bodied with fine tannins that belie a real solid structure. Very good complexity, very Northern Rhone-like in style, it has great precision and impressive complexity towards the edgy, chalky finish. Excellent.
Food Matching Note:
Works wonderfully well with any rich red meat or game dish, such as venison or pheasant stew.
Tasting Note:
Deep mulberry in colour. Intense aromas of bramble underpinned by white pepper and mixed spice. Winter berries, stewed plums and cloves finish a rich, opulent palate with firm, fine-grained tannins
Vinification Note:
We made 4 barrels of wonderful, elegant Shiraz with the cool growing conditions showing the white spice, red berry fruit and perfume associated with Hermitage.
As a result we planted more Shiraz, with some Mourvedre and Viognier as potential blending components and changed the name to Syrah reflecting its more Northern Rhone style. The Syrah spends 12 months in oak (955 French and 5% American).
