Ageing Potential:
Superb drinking now, but can still be cellared for five plus years.
Food Matching Note:
A fantastic aperitif. Match with creamy vegetable soups, seafood chowder, and prawn tempura. Also delicious with grilled fish, or a smoked chicken salad.
Tasting Note:
Fresh lime juice, with rich honey-suckle and toastiness just beginning to show on the nose. Shows all the characteristics of a classical Eden Valley Riesling with some bottle development. It has the refreshingly clean, mineral acidity, honeying middle palate and crisp dry finish in the tradition of the high country Rieslings. Still amazingly fresh and youthful.
Vinification Note:
The grapes are picked early and fermented cold in stainless steel tanks. Following a 2 week fermentation period, the wine is clarified and bottled immediately.
